Almost Paleo Meatloaf


On Tonite's Dinner Menu:

Homemade Meatloaf

2 Pounds lean grass-fed ground beef
1 Lg. Carrot, minced
1 Lg. Onion, minced
3 Celery stalks, thinly sliced
1 cup grated Parmesan cheese*
2 Eggs
2 Garlic cloves, minced
Fresh Parsley or season as desired
Salt & Pepper

*To make this dish 100% Paleo leave out the cheese, but I can't guarantee that it will stay together as nicely (or taste as good).

Preheat the oven to 350 degrees. Then, mix up all the ingredients in a large bowl. Next, dump your colorful hunk of meat into a casserole dish and pop it in the oven for about an hour. Once it's cooled off you're safe to enjoy! Because this dish contains a very small amount of carbs, top it off with some marinara sauce to zone-it-up.

Don't Forget: 1 block Protein = 1.5oz ground beef

Get some! This is the only good reason to shop there, but it's a damn good one.

P.S. Safeway sells grass-fed beef!"<----- Is that 100% grass fed or partially grass fed beef? I learned that some companies have caught on to the grass fed beef interest, so they feed their cattle grass for a limited time. Then they slap the grass fed label on and charge a premium. Sadly, the premium (better EFA profile) is lost on the partially grass fed beef.

Safeway grass fed beef is grain finished and comes from questionable ranch sources. If you feed a cow grass once you can say that it was fed grass.

Prather Ranch ground beef (I am of course biased here) is raised about as well as you could imagine, is grass finished (meaning it eats grass all the way to the slaughterhouse) and ends up being about $4.99 a pound if you get the five pound special.

It freezes without problems due to being nitrate free and tastes most delicious.

As an added bonus you get to talk to Scott V. when you buy it at the Grand Lake or Temescal farmer's market.

Thanks Chad, that deal does sound a bit too good to be true. I used to buy Prather meat all the time but stopped simply because i didn't want to go fight the crowds at the FM and the parking suck...looks like I'll be hitting you guys up agian.

I just wanted to say I tried your recipe today and it came out awesome. I can only imagine it would taste better with the grass fed beef. Keep up the good work!
